Easy, healthy & yummy caremelized nuts recipe
I love sugared almonds but they’re not an everyday snack, especially if avoiding sugar! So I tried my hand at making my own healthier version so I don’t feel so guilty gobbling a handful down! If you do use almonds in this recipe they come out the oven beautifully glazed and look much prettier than the pecans because of their smoother shell. But as I use lots of almond butter, milk and flour already, and actually prefer the sweet softness of pecans, this is how I prefer them. My secret ingredient is organic coconut sugar which gives them a light textured sweetness. Of course play around with the recipe and better still make a mixture of nuts so you’re getting a range of nutrients in one handful, and adding cinnamon is always a nice change. This is actually so easy I’m embarrassed to even post about it, but it’s been requested, so here it goes:
Ingredients:
400g Raw (pref organic) whole nuts, 1 teaspoon of organic coconut oil, 4 tablespoons of organic honey, 1 tablespoon of organic coconut sugar
How To:
Heat the oven to 180C/350F. On low heat, melt the coconut oil and honey in a small saucepan. Pour all the nuts in a large bowl, drizzle the melted liquid over the nuts mixing well with a wooden spoon until all the nuts have some honey. (I don’t like them dripping in excess honey as they come out too stuck together and sweet, but you can vary how much you coat your nuts!
Spread out the mixture on a baking tray lined with baking paper and pop in the oven for 10 – 20mins depending on how baked and crunchy you like them. When the nuts start to brown I usually turn the heat off and leave them in for another 5 mins.
Take them out, leave them too cool completely and then use the wooden spoon to break up any nuts that are suck together. I store these in a tupperware for 10 days in the cupboard and they go really well with yogurt, ice cream or fruit. However be aware of nut allergies if feeding them to others…. Pop into a bowl or a sandwich bag when on the go, and munch away!
